- 1 pkg. Active dry yeast, or 1 yeast cake (3/5 oz.)
compressed
- 2/3 cup Water
- 2/3 cup Milk
- 2 tablespoons Sugar
- 2 tablespoons Shortening
- 1 1/2 teaspoons Salt
- 3 1/2-4 cups Sifted Ceresota/Heckers Unbleached Flour
- Dissolve
active dry yeast in warm water (105º-115º) or compressed
in lukewarm (80º-85º) water.
- Scald
milk; add sugar, shortening and salt.
- Cool
to lukewarm, add to yeast.
- Add
flour gradually, mixing with spoon, then with hands until well-blended.
- Place
on lightly floured board; knead until smooth and elastic.
- Place
in greased bowl; rub top with shortening; cover with damp cloth.
- Let
rise in warm place (80º-85º) until double in bulk (1 1/2
to 2 hours).
- Punch
down; cover; let rise again until almost double (30-40 minutes).
- Form
into loaf and place in well-greased 9x5x3-inch bread pan.
- Rub
top with shortening; cover; let rise in warm place until sides of
dough reach top of pan and center is well-rounded (about 50 minutes).
- Bake
in pre-heated hot oven (425º) about 30 minutes or until tests
done.
- Remove
from pan; cool on rack.
- If soft
crust is desired, brush with butter before cooling.
